Contemporary Polish cuisine is the result of a centuries-old culinary tradition, which was influenced by many factors. One of them was the location and the resulting resource of raw materials available at this latitude. For centuries, numerous forests have provided mushrooms, berries, raspberries and honey, and the fertile lands of agricultural products such as cereals, peas, groats, meat and milk. These and other available raw materials were processed in the kitchen in various ways, and the palate of old Poles decided to choose their favorite dishes from the available assortment. The second factor was religion, which in pagan times gave ritual meanings to dishes. Dumplings, reminiscent of the sun with its rays, are associated with solar practices that were practiced in today’s Poland, e.g. on Mount Ślęża. The egg, as the seed of a new life, became a symbol of rebirth and the beginning of the world, and the poppy, with a multitude of seeds, was considered a symbol of fertility. In Christian times, some pagan beliefs were adapted to the practices of the new faith. For example, dumplings were originally served only during holidays, and an egg as a symbol of Christ’s resurrection was served during Easter …
